These Zucchini Fritters combine fresh zucchini and herbs with creamy pieces of feta cheese. This recipe is based off of a traditional Greek recipe for Kolokythokeftedes, which are zucchini and feta fritters. You can find many different versions of this recipe throughout the Medditeranean. This recipe uses cornstarch instead of flour to create a lighter batter. Chef Erin recommends serving these with Greek yogurt or tzatziki.

Ingredients

  • 2 cups grated zucchini
  • ½ cup chopped green onions
  • ½ cup chopped Italian parsley
  • ½ cup cornstarch
  • 1 egg
  • 2 cloves garlic, finely chopped
  • 1½ teaspoons dried oregano
  • ½ teaspoon dried dill
  • ½ cup feta cheese

    Make batter

    • Place grated zucchini in center of clean kitchen towel (or double layered paper towel). Using both hands, squeeze out as much liquid as possible. Transfer zucchini to medium bowl.
    • To bowl, add green onions, parsley, cornstarch, egg, garlic, oregano, dill, ½ teaspoon of kosher salt and ¼ teaspoon of black pepper. Stir together.
    • Add feta and gently stir together.

    Prep tray and begin cooking

    • Evenly drizzle ¼ cup olive oil on Brava metal tray.
    • Place 9 piles of batter, evenly spaced apart, in Zones 1, 2 and 3 of metal tray.
    • Using back of spoon, pat down and spread each pile into thin layer. Try to avoid fritters touching. You will have three rows of fritters.
    • Slide metal tray into top shelf. Press green button to begin cooking.
    • Note: you will flip fritters after 9 minutes.

    Flip zucchini fritters

    • When Brava notifies you, carefully remove metal tray.
    • Using spatula, flip fritters.
    • Slide metal tray into top shelf. Press green button to continue cooking.

    Finish and serve

    • When Brava notifies you, carefully remove metal tray.
    • Place zucchini fritters on plate lined with paper towel.
    • Transfer to serving plate.
    • Serve hot, warm or at room temperature.
