Ingredients

  • 1 NY strip steak (1-2” thick)
  • ½ cup (1 stick) unsalted butter, at room temperature
  • 1 garlic clove, grated or finely chopped
  • 1 tablespoon fresh herbs (parsley, thyme, and/or chives, etc.), finely chopped
  • 1 teaspoon lemon juice
  • ¼ teaspoon kosher salt
  • ¼ teaspoon black pepper

    Prep garlic herb butter

    • In small bowl, mash together room temperature butter, garlic, herbs, lemon juice, kosher salt and black pepper.
    • Spoon butter onto piece of plastic wrap. Form into log and wrap well.
    • Chill in refrigerator for at least 1 hour.

    Cook steak

    • When ready, cut 1” piece (about 1 tablespoon) of herb butter from the chilled log. Set aside.
    • Pat steak dry with paper towels.
    • Season both sides with kosher salt.
    • Place in Zone 2 of Brava metal tray.
    • Select steak size on Brava.
    • Slide metal tray into bottom shelf. Press green button to begin cooking.
    • Note: Brava will notify you to remove metal tray, flip steak and add butter approximately midway through the cook.

    Flip steak and add butter

    • When Brava notifies you, carefully remove metal tray.
    • Using tongs, flip steak. Press steak down so that the bottom of steak is in full contact with metal tray.
    • Place piece of herb butter on top of center of steak.
    • Slide metal tray into bottom shelf. Press green button to continue cooking.

    Finish and serve

    • When Brava notifies you, carefully remove metal tray.
    • Immediately transfer steak to cutting board.
    • Let steak rest for 2 minutes.
    • Slice steak and serve.
