Love garlic and hummus? This is the perfect recipe for you! This hummus is simple to make and has tons of flavor. First a head of garlic is roasted in the Brava and then the hummus comes together easily in a blender. Chef Erin enjoys hummus with fresh pita or pita chips. It’s also delicious served alongside some raw vegetables or on a sandwich or wrap!

Ingredients

  • 1.0 heads garlic
  • 2.0 count 15oz. cans chickpeas
  • 0.5 cups tahini
  • 0.25 cups lemon juice
  • 0.25 cups ice-cold water
  • 1.0 teaspoons
  • 0.25 teaspoons cumin
  • 1.0 tablespoons olive oil for serving (optional)

Instructions

  1. 1

    Roast garlic

    • Cut off top 1/2" of garlic head.
    • Place garlic, cut side up, in Zone 2 of Brava metal tray.
    • Slide metal tray into top shelf. Press green button to begin cooking.

    Cool garlic

    • When ready, carefully remove metal tray from Brava.
    • Let garlic cool for at least 10 minutes.
    • While garlic is cooling, prepare the chickpeas.

    Prepare hummus

    • Pour chickpeas into fine-mesh strainer. Rinse chickpeas under running water and drain. Place chickpeas in blender or food processor.
    • When garlic is cool, squeeze roasted garlic cloves into blender.
    • Add tahini, lemon juice, ice-cold water, kosher salt and cumin.
    • Blend hummus on high speed until smooth.

    Finish and serve

    • Transfer hummus to serving bowl. Drizzle olive oil on top of hummus, if desired.
