About this Recipe

This crispy Schnitzel consists of thinly pounded pork that is breaded then pan-fried in Brava. If you don’t want to use pork, feel free to substitute any type of meat here -- just make sure to use the same quantity and pound it to ¼” thick. Chef Erin suggests serving this with a squeeze of lemon, and it is also delicious topped with capers, a fried egg, mustard sauce or simply on its own!

Ingredients

  • ¾ lb thin-cut boneless pork chops (about 4-5 pork chops)
  • 1¼ cup Panko breadcrumbs
  • ¼ cup all-purpose flour
  • 1 egg
  • 1 tablespoon butter, melted
  • Lemon for serving (optional)
  • vegetable oil

    Prep ingredients

    • Place pork chops between two pieces of plastic wrap on top of cutting board. Using meat mallet (or rolling pin), pound until ¼” thick. Set aside.
    • Place breadcrumbs in large ziploc bag. Using rolling pin, crush breadcrumbs until fine in texture. Transfer breadcrumbs to large bowl. Set aside.
    • Place flour in medium bowl. Set aside.
    • Crack egg into separate medium bowl. Using fork, whisk egg. Set aside.

    Assemble pork

    • Season both sides of pork with kosher salt and black pepper.
    • Place one pork chop in medium bowl containing flour. Toss to coat. Shake off excess flour.
    • Transfer to medium bowl containing egg. Coat pork with egg. Shake off excess egg.
    • Transfer to large bowl containing breadcrumbs. Toss to coat. Place coated pork chop on plate. Set aside.
    • Repeat with remaining pork chops.

    Prep tray and begin cooking

    • Spread 3 tablespoons of vegetable oil and melted butter evenly across Zones 1, 2 and 3 of Brava metal tray.
    • Place pork chops, evenly spaced apart, across Zones 1, 2 and 3 of metal tray.
    • Pat down pork so that each piece is in full contact with metal tray.
    • Slide metal tray into bottom shelf. Press green button to begin cooking.
    • Note: you will flip schnitzel after 9 minutes and 30 seconds.

    Flip schnitzel

    • When Brava notifies you, carefully remove metal tray.
    • Using spatula, carefully flip each schnitzel. Press down schnitzel so that it is in full contact with metal tray.
    • Slide metal tray into top shelf. Press green button to continue cooking.
    • While schnitzel finishes cooking, line plate with paper towel. Set aside.

    Finish and serve

    • When Brava notifies you, carefully remove metal tray.
    • Place schnitzel on plate lined with paper towel. Sprinkle with kosher salt.
    • Transfer to serving plate. Garnish with lemon wedges (if desired).
    • Serve immediately.
