This recipe combines rice with tomato, onion and garlic to give you the authentic flavor of restaurant-style Mexican rice. The first step in this recipe is to toast the rice in the Brava, which mirrors the traditional method of toasting the rice over the stovetop before adding any liquid. This recipe calls for chicken stock, but you can use a bouillon cube instead (if doing so, simply replace the stock with water and reduce the amount of salt used to 1 teaspoon) or vegetable stock if you would like to make it vegetarian. This recipe is great to serve with fajitas, tacos or Brava Chef Travis’ favorite way—with tortilla chips!

Ingredients
- ⅓ cup vegetable oil
- 2 cups long-grain rice
- 1½ cups unsalted chicken stock
- 3 Roma tomatoes, quartered
- ¼ yellow onion
- 2 cloves garlic
- 1 tablespoon tomato paste

Toast rice
- In the Brava Chef’s Pan, add vegetable oil and rice. Stir together.
- Spread rice evenly across bottom of Chef’s Pan.
- Slide Chef’s Pan, uncovered, into top shelf. Press green button to begin cooking.
- While rice is toasting, prepare tomato base.
- Note: You will add tomato base after 9 minutes 30 seconds.

Prepare tomato base
- In a blender, add chicken stock, tomatoes, onion, garlic, tomato paste, 1½ teaspoons salt and ½ teaspoon black pepper.
- Blend until smooth.

Continue prepping rice
- When Brava notifies you, carefully remove Chef’s Pan.
- Carefully pour tomato base over rice (beware it may splatter since it’s hot).
- Stir gently, making sure all rice grains are submerged.

Cook rice
- Cover Chef’s Pan with lid.
- Slide Chef’s Pan, covered, into top shelf. Press green button to continue cooking.

Finish & serve
- When Brava notifies you, carefully remove Chef’s Pan.
- Fluff with fork, gently mixing top tomato layer with rice and serve.
