Shepherd’s Pie is a comforting dish of braised meat and vegetables topped with mashed potatoes. It’s savory, rich, and the ideal dish for crisp nights. Plus, it’s the perfect way to use up leftover mashed potatoes! Its origins span from England to Ireland where farmers, or shepherds, would make this dish when temperatures dropped. While there are regional variations on the recipe, Shepherd’s Pie always starts by cooking ground meat, such as lamb or beef. Once the meat is browned it’s stewed with cooked vegetables, topped with mashed potatoes, and baked until the potatoes are nicely browned with crispy bits along the edges. Chef Annie loves using leftover Cheesy Cauliflower Mash in place of mashed potatoes as well.

Ingredients

  • 1½ lbs ground beef or lamb
  • 2 cups chopped yellow onion (about 1 medium onion, ½-inch pieces)
  • 1½ cups chopped mushrooms (½-inch pieces)
  • ¾ cups chopped carrot (about 2 small carrots, ½-inch pieces)
  • ¾ cups chopped celery (about 2 stalks, ½-inch pieces)
  • 3 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 1 tablespoon all-purpose flour
  • 1½ teaspoons finely chopped fresh rosemary
  • 1½ teaspoons finely chopped fresh thyme
  • 1½ cups beef or chicken stock
  • ½ cup frozen green peas
  • 2 tablespoons Worcestershire sauce
  • 5 cups mashed potatoes (Use a recipe that begins with 3 lbs of potatoes)
  • 2 tablespoons chopped fresh Italian parsley (optional)
  • Optional: grated cheese

  1. 1

    Cook ground beef

    • Add 1 tablespoon of olive oil or melted butter to the Brava Chef's Pan.
    • Press ground beef in an even layer in the Chef's Pan. Season with generous pinch of kosher salt.
    • Slide Chef's Pan, uncovered, into top shelf. Press green button to begin cooking.
    • Note: You will remove Chef’s Pan after 20 minutes.

    Cook vegetables and tomato paste

    • Once Brava notifies you, carefully remove Chef’s Pan.
    • Break up ground beef with a wooden spoon. Transfer beef to bowl;set aside. Reserve fat and cooking liquid in Chef’s Pan.
    • Add onion, mushroom, carrot, celery, garlic, and tomato paste, 1 tablespoon of olive oil or melted butter and a few pinches of kosher salt to Chef's Pan; stir well. Slide Chef's Pan, uncovered, into top shelf. Press green button to continue cooking.
    • Note: You will remove Chef's Pan after 12 minutes.

    Add flour

    • Once Brava notifies you, carefully remove Chef’s Pan.
    • Add flour to vegetables; stir well.
    • Slide Chef's Pan, uncovered, into top shelf. Press the green button to continue cooking.
    • Note: You will remove Chef's Pan after 1 minute.

    Add stock, Worcestershire, peas, herbs, and ground beef

    • Once Brava notifies you, carefully remove Chef's Pan.
    • Add stock, Worcestershire sauce, peas, herbs, and ground beef to Chef's Pan. Stir, making sure to scrape any browned bits on the sides of the pan into the mixture for added flavor.
    • Slide Chef's Pan, uncovered, into top shelf. Press the green button to continue cooking.
    • Note: You will remove Chef's Pan after 10 minutes.

    Top with mashed potatoes and finish baking

    • Once Brava notifies you, carefully remove Chef's Pan. Press the green button to begin preheating (keep the Brava chamber empty during this step).
    • While the Brava preheats to 375, evenly spread mashed potatoes on top of meat and vegetables. You can use the back of a wooden spoon, or even a Ziploc bag with the corner cut off.
    • If using grated cheese, evenly distribute over mashed potatoes.
    • Once Brava notifies you that preheat is complete, slide Chef's Pan, uncovered, into top shelf. Press green button to finish cooking.

    Cool and serve

    • When your food is done, add a top sear step for more browning on top if desired. Cool for about 15 minutes. Top with fresh parsley, if using, and serve.
