Ingredients

  • 4 veal shanks, 12-16 oz each
  • ⅓ cup all-purpose flour
  • ¼ cup vegetable oil
  • 1 large onion (½” pieces)
  • 1 large carrot (½” pieces)
  • 4 stalks of celery (½” pieces)
  • 2 cloves sliced or minced garlic
  • 1 cup chicken stock, or beef stock
  • 1 cup dry white wine
  • 1 can (8 oz) tomato paste
  • 3 sprigs fresh thyme
  • 3 bay leaves
  • 2 tablespoons butter (optional)
  • 2 tablespoons chopped parsley (optional)

    Prep and Sear veal

    • In medium bowl, combine ⅓ cup all purpose flour and pinch of salt; stir well.
    • Pat veal shanks dry with paper towels.
    • Toss veal shanks with flour mixture, shaking off excess.
    • Add ¼ cup vegetable oil to Brava Chef’s Pan.
    • Place veal shanks in Chef’s Pan and slide uncovered, into top shelf.
    • Select “Osso Buco” on your touch screen and follow instructions.
    • Press green button to begin cooking.
    • Note: You will flip veal shanks after 17 minutes.

    Flip veal shanks

    • Once Brava notifies you, carefully remove Chef’s Pan.
    • Flip veal shanks.
    • Slide Chef’s Pan, uncovered, into top shelf.
    • Press green button to continue cooking.
    • Note: You will add additional ingredients after 7 minutes and 30 seconds.

    Cook vegetables

    • Once Brava notifies you, carefully remove Chef’s Pan.
    • Remove veal shanks and set aside.
    • Add onions, carrots, celery and garlic to Chef’s Pan; stir well, making sure to scrape up any brown bits on bottom of pan.
    • Slide Chef’s Pan, uncovered, into top shelf.
    • Press green button to continue.
    • Note: You will stir ingredients after 8 minutes.

    Stir vegetables

    • Once Brava notifies you, carefully remove Chef’s Pan.
    • Stir vegetables.
    • Slide Chef’s Pan, uncovered, into top shelf.
    • Press green button to continue.
    • Note: You will add veal and additional ingredients after 7 minutes.

    Cook osso buco

    • Once Brava notifies you, carefully remove Chef’s Pan.
    • Add tomato paste to vegetables; stir well to break up any lumps.
    • Add veal shanks, chicken stock, wine, thyme, bay leaves, and butter; stir well.
    • Slide Chef’s Pan, covered, into top shelf.
    • Press green button to finish cooking.

    Serve

    • When Brava notifies you, carefully remove Chef’s Pan.
    • Top with parsley, if desired, and serve.
