Kofta Kebabs

About this Recipe
The word kofta comes from Persia and loosely translates to “to pound” or “to grind”, referring to the ground meat mixture that’s wrapped around skewers. Variations are found in Mediterranean, North African and Indian cuisines. Kofta are traditionally grilled over open fire, but Chef George Duran likes to make them much faster in his Brava!
Ingredients
- 1.0 ground beef, preferably 85% lean
- 0.5 cups finely chopped yellow onion (¼-inch pieces)
- 0.5 cups fresh flat-leaf parsley leaves, finely chopped
- 1.0 tablespoons tomato paste
- 0.5 teaspoons ground cumin
- 0.5 teaspoons paprika
- Greek yogurt and lemon wedges, for serving
- kosher salt and black pepper

Prep kofta mixture
- In medium bowl, combine ground beef, onion, parsley, tomato paste, 1 teaspoon kosher salt, cumin, paprika and ½ teaspoon pepper. Using your hands or a spoon, mix ingredients until evenly incorporated.

Mold kofta mixture onto skewers
- Divide kofta mixture into 8 equal portions.
- Using your hands, shape each portion into ovals about 4 inches long. Press one skewer in center of each portion and mold kofta mixture around skewers. Using your palm, gently press each skewer flat.
- Place kebabs lengthwise in Zones 1, 2 and 3 of Brava metal tray.

Cook kofta
- Slide metal tray into bottom shelf.
- Select “Kofta Kebabs” on your touchscreen and follow instructions.
- Note: you will flip the kebabs after 2 minutes and 30 seconds.

Flip kofta kebabs
- Once Brava notifies you, carefully remove metal tray.
- Flip kofta kebabs.
- Slide metal tray into bottom shelf.
- Press green button to continue cooking.

Serve
- When your food is done, transfer kebabs to a serving platter.
- Serve with Greek yogurt and lemon wedges, if desired.
