About this Recipe

Almond Chocolate Chunk Biscotti are here in time for festive gatherings and baking season. Biscotti are baked twice: first as a whole log, then they are sliced and cooked a second time to give them their signature light and crispy texture. These are great with coffee or tea and keep in an air-tight container for several weeks.

Ingredients

  • 1.0 cups flour
  • 0.75 teaspoons baking powder
  • 0.25 teaspoons
  • 3.0 tablespoons butter, at room temperature
  • 0.3333333333333333 cups plus 1 teaspoon sugar
  • 1.0 count egg
  • 1.0 teaspoons vanilla
  • 0.5 cups almonds, chopped
  • 3.0 ounces Bittersweet chocolate, chopped roughly or 1/2 cup chocolate chunks

Instructions

    Prep dough

    • Line Brava Metal Tray with parchment paper.
    • In large mixing bowl, mix flour, baking powder and kosher salt together.
    • In bowl of stand mixer with paddle attachment, add butter and 1/3 cup of sugar. Mix on medium speed for 2 minutes until mixture is light in color.
    • Change speed to low, add egg and vanilla. Mix for 2 minutes or until eggs are evenly incorporated. This may require stopping and scraping down the sides of the bowl with a spatula once or twice.
    • Slowly add flour mixture while to wet mixture while keeping stand mixer on low speed. Once combined, stop.
    • Remove bowl from machine. Fold in chocolate and almonds with spatula until evenly incorporated.

    Shape dough

    • Select "Almond Chocolate Chunk Biscotti" on the Brava touchscreen and press green button to begin rapid preheat, being sure to keep Brava empty during this step.
    • Shape biscotti dough into a log shape diagonally on metal tray. It should roughly be 12" x 4" x 1". Press down on top of log to make the top slightly flat.
    • Sprinkle 1 teaspoon sugar over top of log.

    Bake dough

    • When Brava notifies you that preheat is complete, slide metal tray into top shelf and press green button to begin bake.
    • Note: You will remove Brava metal tray after 25 minutes.

    Remove and slice dough

    • When Brava notifies you that first baking step is complete, carefully remove metal tray.
    • Let cool on metal tray for 5 minutes.
    • Press green button to begin preheating Brava for the next bake, being sure to keep Brava empty during this step.
    • Carefully transfer log to cutting board. With serrated knife or sharp chef's knife, slice into 3/4" thick pieces at a diagonal angle.

    Finish baking

    • Carefully place each biscotti back onto metal tray. The cut side with exposed chocolate and almonds should be facing up.
    • When Brava notifies you that rapid preheat is done, slide metal tray into top shelf and press green button to continue baking.
    • Once the bake is complete, carefully transfer biscotti to wire rack and cool.
    • Enjoy with coffee, tea, or store in airtight container.
