The 90s called and cottage cheese is back! Cottage cheese has been popping up everywhere again and for good reason; it’s protein-packed, rich and luscious, and pairs really well with sweet and savory flavors alike. We love adding it to these pancakes for added moisture and heft. Enjoy with butter and maple syrup, and we promise you won’t tell this recipe is secretly full of nutritious ingredients.

Ingredients

  • For the pancakes:
  • 1.0 cups old-fashioned rolled oats
  • 0.5 cups whole milk cottage cheese
  • 3.0 count large eggs
  • 2.0 tablespoons whole milk
  • 1.0 tablespoons avocado oil
  • 1.0 tablespoons maple syrup, plus more for serving
  • 1.5 teaspoons baking powder
  • 1.0 teaspoons vanilla extract
  • Few pinches kosher salt
  • For serving:
  • Butter and maple syrup, and any other desired toppings, such as fresh fruit (optional)

Instructions

    Prep batter

    • Blend all pancake ingredients in blender, increasing power gradually until completely smooth.
    • Lightly spray Brava Egg Tray wells with cooking spray. Pour just under ¼ cup batter into each well.

    Cook pancakes

    • Select “Cottage Cheese Protein Pancakes” on the Brava touchscreen and follow instructions to slide egg tray into top shelf, and press green button to begin cooking.

    Finish & serve

    • When pancakes are done, carefully remove from egg tray and enjoy with butter and maple syrup.
    • Repeat above steps with remaining batter.
