Shawarma is a Middle Eastern dish, celebrated for its aromatic spices and bold flavor. Traditionally, marinated meat—often lamb, chicken, or beef—is stacked on a vertical spit and slow-roasted, with the outer layers shaved off and served hot. This recipe brings those flavors in a simple, weeknight-friendly way. Chicken thighs are marinated with paprika, cumin, coriander, garlic, lemon, and thinly sliced red onion, then cooked at the press of a button in the Brava. Serve it in a pita or shawarma wrap, over rice, on a salad, or however you like. A sprinkle of fresh parsley and mint, plus a squeeze of lemon, adds a bright, fresh finish that’s absolutely delicious.

  • 2.0 tablespoons fresh lemon juice (about the juice of 1 lemon), plus more lemon wedges for serving
  • 2.0 teaspoons paprika, sweet or smoked variety
  • 1.5 teaspoons ground coriander
  • 1.25 teaspoons None

  • 1.0 count garlic clove, grated or finely chopped
  • 0.5 count small red onion thinly sliced
  • Fresh parsley for serving
  • Fresh mint for serving (optional)

Instructions

    Marinate chicken

    • In a large bowl, add olive oil, lemon juice, paprika, coriander, cumin, turmeric, kosher salt, cinnamon, garlic, and red onion. Whisk mixture to combine and add chicken thighs, tossing to coat. Marinate, covered in refrigerator, for 1 hour.

    Cook chicken

    • Optional: line Brava metal tray with aluminum foil, if using.
    • Shake off excess marinade from chicken then place thighs in Zones 1, 2 and 3 of metal tray.
    • Follow instructions for Shawarma-Spiced Chicken Thighs on touchscreen to slide metal tray into bottom shelf and press green button to begin cooking.

    Finish & serve

    • When Brava notifies you, carefully remove metal tray. If desired, pour excess cooking liquid off tray and add a few Brava sear steps for more color if preferred.
    • Transfer chicken to serving platter, top with squeeze of lemon, fresh parsley, and fresh mint, if using. Enjoy in a wrap, rice bowl, salad, or on its own.
