These muffins have the mellow vibe of zucchini bread mixed with the cozy richness of banana bread—perfect for everything from spring brunch to back-to-school mornings. And that coarse sugar topping? Just the right amount of crunch and cinnamon-y goodness - chef’s kiss. As a note, this recipe yields twelve muffins and bakes six muffins at a time.

Prep batter
- In large bowl, mash banana using fork. Add vanilla, stir to combine, and let sit while you gather rest of ingredients to let the banana soak up the vanilla flavor.
- To bowl with banana mixture, add zucchini, butter, brown sugar, and eggs. Mix with fork until combined.
- In separate bowl, whisk together flour, cinnamon, baking soda, baking powder, and kosher salt.
- Gradually whisk dry ingredients into wet ingredients until fully combined.

Prep topping
- In small bowl, mix turbinado or demarara sugar with few pinches cinnamon. Set aside.

Preheat Brava and prep muffins
- Select “Banana Zucchini Muffins with Cinnamon Sugar Crunch” on the Brava touchscreen and follow on-screen instructions. Press green button to begin Rapid Preheat step to 350 F, being sure to keep Brava chamber empty during this step.
- While Brava preheats, spray Brava Muffin Tin with cooking spray or line each muffin well with a cupcake or muffin liner.
- Using rubber spatula, divide batter among cups, filling each three-fourths full.
- Top each muffin with a few sprinkles of sugar and cinnamon topping.
- Set aside remaining batter, you’ll repeat these steps after you bake the first batch of six muffins.

Bake muffins
- When Brava is preheated, slide muffin tin into top shelf. Press green button to begin baking.

Finish & serve
- When your food is done, transfer muffin tin to wire rack and let cool for 5 minutes before serving. Enjoy with butter, if desired.
- Repeat above steps with remaining batter.
