About this Recipe

Taco night never tasted so good! Beef chuck—a well-marbled shoulder cut—slow-cooks in Brava with smokey and sweet Mexican spices until it’s tender and easy to shred. Pile it into warmed tortillas and top with fresh lime juice, diced white onions, and cilantro.

Ingredients

  • For the braised chuck:
  • 1.0 count 3-3.5 lbs boneless chuck, cut into 3-inch cubes
  • 0.5 cups freshly squeezed orange juice, or about the juice of 1 large orange
  • 1.0 count yellow onion, thinly sliced
  • 0.25 cups taco spice blend
  • 4.0 count large garlic cloves, peeled and smashed
  • 2.0 teaspoons None
  • ¾ cup - 1 cup water
  • fresh lime and cilantro for serving
  • For the tacos:
  • 12.0 count taco-sized tortillas, warmed, plus more as needed
  • 1.0 count small white onion, finely chopped
  • Fresh lime wedges
  • Fresh cilantro
  • Your favorite salsa and/or guacamole, if desired

Instructions

  1. 1

    Prep chuck & aromatics

    • In a large mixing bowl, add cubed up chuck, orange juice, onion, taco spice blend, garlic, and kosher salt. Toss to evenly distribute ingredients and coat cubed up chuck.
    • Transfer mixture into Brava Chef’s Pan.
    • Pour ¾ cups of water into Chef’s Pan. *You want the beef to be about three quarters of the way submerged in water, add another ¼ cup of water if needed.

    Braise chuck

    • Select “Mexican Braised Chuck” on the Brava touchscreen and follow the on-screen instructions to press the green button to begin rapid preheat to 325F. Keep Brava chamber empty during this step.
    • When Brava notifies you that preheat is complete, slide Chef’s Pan, covered with lid, into top shelf.
    • Press green button to begin cooking.
    • Note: You will remove Chef’s Pan after 2 hours and 30 minutes.

    Shred beef

    • When Brava notifies you, carefully remove Chef’s Pan and press green button to begin rapid preheat to 425F degrees.
    • With two forks, shred beef into bite sized chunks, or smaller, if desired.

    Sear beef

    • When Brava notifies you that rapid preheat is complete, slide Chef’s Pan, uncovered, into top shelf.
    • Press green button to begin cooking.

    Finish & assemble tacos

    • When cooking is complete, skim off some of the beef fat, if desired.
    • Top shredded beef with squeeze of fresh lime juice and a pinch of fresh, chopped cilantro.
    • Distribute shredded beef into warmed tortillas. Top each taco with diced raw white onion, a squeeze of fresh lime juice, and chopped fresh cilantro. Spoon guacamole and/or salsa on top as well, if desired.
    • Serve while warm.
