Chimichurri Chicken Thighs

About this Recipe
If you’ve never marinated chicken in Chimichurri before, this recipe will make the case. Chimichurri is a flavorful sauce of herbs and vinegar that originated in Argentina, and it’s typically spooned over grilled meats. Marinating chicken thighs in this herbaceous sauce adds major flavor and it cooks at the press of a button in Brava - so simple and so good. Use the personalization slider to increase the cooking time and temperature if you want a bit of char.
Ingredients
- 2.0 pounds boneless, skinless chicken thighs
- 2.0 count garlic cloves, grated or finely chopped
- 3.0 tablespoons red wine vinegar
- 1.5 teaspoons
- 0.5 cups flat leaf parsley leaves and stems, chopped
- 0.5 cups cilantro leaves and stems, chopped
- 0.25 cups fresh oregano, chopped
- 0.75 cups
- 0.25 teaspoons ground cumin
- 0.25 teaspoons
- Pinch crushed red pepper flakes, plus more for serving

Prep chimichurri
- In mixing bowl, mix garlic with vinegar and salt. Let sit 5 minutes.
- To mixing bowl, add parsley, cilantro, oregano, olive oil, cumin, black pepper, and pinch of crushed red chili flakes. Stir to combine.
- Transfer 4 tablespoons chimichurri to small bowl and set aside, you’ll use this to spoon over the cooked chicken.

Marinate chicken
- Toss chicken thighs in chimichurri to evenly coat. Cover mixing bowl with plastic wrap or transfer to large ziplock bag and marinate in refrigerator for up to 4 hours, and at least 30 minutes.

Cook chicken
- Optional: line metal tray with aluminum foil for easier cleanup.
- Arrange chicken in even layer across Zones 1, 2, & 3 of Brava Metal Tray.
- Select “Chimichurri Chicken” on the Brava touchscreen and follow on-screen instructions to slide metal tray into bottom shelf.
- Press green button to begin cooking.

Finish & serve
- When chicken is done cooking, carefully remove metal tray from Brava.
- Transfer chicken to serving platter. Spoon reserved chimichurri over cooked chicken, and top with few pinches crushed red chili flakes, if desired. Serve while warm.
