Thai-Inspired Basil Chicken

About this Recipe
This recipe is inspired by Thai Basil Chicken, a wildly flavorful dish of chicken, aromatics, and spicy chilies that’s tossed in a sauce with savory, umami-rich notes. What really brings this dish together is folding in heaping amounts of fresh basil to finish. Though not perfectly authentic, this recipe takes elements we love from the classic. Make this as spicy or as mild as you prefer. For a milder dish, seed your serrano or jalapenos before dicing. For a spicier kick, leave the seeds in or even better, use a few bird’s-eye chilies if you can source them.
Ingredients
- For the chicken:
- 2.0 tablespoons neutral oil, such as avocado oil
- 1.0 ground chicken
- 4.0 cloves garlic, roughly chopped
- 1.0 count shallot, diced
- 2.0 count serrano or jalapeno peppers, seeds removed and diced
- For the sauce:
- 2.0 tablespoons soy sauce
- 1.0 tablespoons fish sauce
- 1.0 tablespoons oyster sauce
- 1.0 teaspoons brown sugar
- For serving:
- 1.0 cups fresh basil, sliced into ribbons, preferably Thai or opal basil
- Sliced scallions, lime wedges, and white rice for serving (optional)

Cook Chicken
- Add oil to Brava Square Pan and move pan around to evenly distribute oil. Add chicken, season with kosher salt.
- Select “Thai-Inspired Basil Chicken” on Brava touchscreen and follow instructions to slide square pan into top shelf. Press green button to begin cooking.
- Note: You will stir ground chicken and add aromatics after 10 minutes.

Add aromatics
- Once Brava notifies you, carefully remove square pan.
- Add garlic, shallot, and chilies, and stir to incorporate and further break up ground chicken.
- Return square pan to top shelf. Press the green button to continue cooking.
- Note: you will add the sauce after 3 minutes.

Add sauce
- Once Brava notifies you, carefully remove square pan. Add soy sauce, fish sauce, oyster sauce, and brown sugar, stir to combine.
- Return square pan to top shelf. Press the green button to continue cooking.

Finish & serve
- When food is done cooking in Brava, immediately add fresh basil to chicken while it’s still warm, and fold it in, continuing to toss until basil begins to soften and wilt. If not serving immediately, cover square pan with foil to keep warm and continue wilting the basil.
- Serve over white rice with lime wedges and sliced scallions, if desired.
