Avocado Toast with Eggs
About this Recipe
The avocado toast trend is not going away and Brava makes it even better. In this recipe, eggs poach or fry on the top shelf in the Egg Tray while sourdough toasts on the bottom shelf. While the eggs and toast come together in Brava you’ll mash up avocado with kosher salt and anything else you’d like. Chef Andrew loves fresh lemon juice, garlic, chives, cilantro, or chilies.
Ingredients
- 1.0 count slice of sourdough bread
- 1.0 count egg
- 1.0 count avocado
- kosher salt
- cooking spray or butter

Prep Eggs
- Place bread in Zone 1 of the Brava metal tray.
- For fried eggs, lightly butter or spray indicated cup(s) on egg tray.
- For poached eggs, add 3 tablespoons of water to indicated cup(s) on egg tray.
- Crack eggs into designated wells on Brava egg tray.
- Slide egg tray into top shelf.
- Slide metal tray into bottom shelf.
- Select “Avocado Toast with Eggs” on your oven touch-screen and follow instructions.

Prep avocado
- Cut avocado(s) in half and place in medium bowl.
- Add a pinch of salt and additional herbs and flavors if desired; garlic, basil, cilantro, chives, lemon, lime, chilis.
- Mash avocado mixture and set aside.

Assemble avocado toast
- When your cook is done, carefully remove metal tray transfer eggs and toast to cutting board.
- Spread avocado mash on one side of toast.
- Place egg on top of avocado toast.
- Serve and enjoy.
