Turkish Eggs (Menemen)

About this Recipe
Menemen is a classic Turkish breakfast dish of scrambled eggs with tomatoes, green pepper, and onion. This simple and flavorful recipe comes together in the Brava Square Pan. Enjoy with crusty bread or pita for dipping, and crumbled feta, if desired.
Ingredients
- 0.5 count yellow onion, diced
- 0.5 count green bell pepper, diced
- 1.0 tablespoons
- 2.0 tablespoons
- 2.0 count large tomatoes, diced
- 0.25 teaspoons red pepper flakes
- 3.0 count eggs
- 0.3333333333333333 cups crumbled feta cheese, few pinches fresh parsley, and crusty bread or pita for serving (optional)
- kosher salt and black pepper

Cook onions and bell peppers
- In square pan, combine onion, bell pepper and olive oil. Place butter on top of vegetables.
- Select “Turkish Eggs (Menemen)” on the Brava touchscreen and follow instructions to slide square pan into top shelf. Press green button to begin cooking.
- Note: you will remove square pan at 5 minutes.

Prep tomatoes
- While the onions and peppers cook, place tomatoes in large bowl. Gently crush with wooden spoon until the tomatoes have released a lot of their juices.
- Add red pepper flakes and a couple pinches of salt and cracked black pepper to tomatoes and stir to combine.

Add tomatoes
- When Brava notifies you, add tomato mixture to onions and peppers and stir to combine.
- Slide square pan into top shelf. Press green button to continue cooking.
- Note: you will remove square pan at 10 minutes.

Add eggs
- In a small bowl, whisk eggs with fork. Add a pinch of salt and pepper and whisk until combined.
- When Brava notifies you, add egg mixture to tomato and onion mixture, stir to combine.
- Slide square pan into top shelf. Press green button to continue cooking.

Finish & serve
- When food is done cooking in Brava, carefully remove square pan. Mix immediately.
- Optional: top with crumbled feta and fresh herbs. Serve alongside crusty bread or toasted pita.
