Lemony, soft, and just sweet enough - these Lemon Poppy Seed Muffins are the perfect morning treat. Enjoy with butter and thank us later. This recipe yields enough batter for twelve muffins — bake six at a time and repeat with the remaining batter.

Ingredients

  • 2.5 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 0.5 teaspoons baking soda
  • 0.5 teaspoons
  • 0.75 cups granulated sugar
  • 0.5 cups butter, melted and cooled slightly
  • 0.5 cups whole milk
  • 0.5 cups Greek yogurt
  • 2.0 count eggs
  • 2.0 tablespoons lemon juice
  • 4.0 teaspoons poppy seeds
  • 1.0 tablespoons lemon zest
  • 1.0 teaspoons vanilla extract

Instructions

    Prep batter

    • In medium bowl, gently whisk together flour, baking powder, baking soda and salt.
    • In large bowl, whisk together sugar, melted butter, milk, yogurt, eggs, poppy seeds, lemon juice, lemon zest and vanilla extract.
    • With spatula, slowly fold dry mixture into wet mixture until fully incorporated. Be careful not to over mix.

    Fill muffin tins

    • Select “Lemon Poppy Seed Muffins” on the Brava touchscreen and follow instructions to press green button to begin rapid preheating, being sure to leave Brava completely empty during this step.
    • While Brava preheats, line Brava muffin pan with muffin liners or grease with cooking spray.
    • Distribute half of mixture evenly amongst muffin tins.

    Bake muffins

    • When Brava is done preheating, slide muffin tin into top shelf and press green button to begin baking.

    Finish & serve

    • Carefully place muffins on wire cooling rack. If you did not use muffin liners, wait 5 minutes for muffins to cool in pan before removing.
    • Repeat above steps with remaining batter.
