About this Recipe

We love trying flatbreads in any shape and form from across the globe and Scallion Pancakes are at the top of our list. A must-have at our favorite Chinese restaurants, scallion pancakes are a savory flatbread with many layers of flaky dough studded with, you guessed it, scallions. This is our Brava take on the classic. This recipe makes about 4 medium sized pancakes.

Ingredients

  • 2.5 cups all-purpose flour
  • 1 teaspoon salt
  • 0.75 cups very warm water
  • 1.0 tablespoons chicken base, beef base, bouillon, stock, etc.
  • 8.0 count scallions stalks, ¼” slices
  • 4.0 teaspoons toasted sesame oil
  • 4.0 teaspoons chinese five spice (optional)
  • 4.0 teaspoons lard, tallow, or schmaltz (optional)
  • 4.0 pinches flavor enhancer or msg (optional)
  • cooking oil
  • kosher salt

Instructions

  1. 1

    Prep water and dough

    • In large measuring cup mix very warm water with chicken base until fully dissolved.
    • In large mixing bowl mix flour, salt, and water. Mix thoroughly.
    • Mix or knead until dough is smooth and lightly tacky. Use additional water or flour as needed.
    • Allow dough to rest for approximately 30 minutes to 2 hours.

    Roll out dough, add green onions, roll and fold into spiral

    • Portion dough into 4 equally sized balls, a little larger than a golf ball.
    • Evenly roll each dough-ball into flatter more circular shape about ⅓” thick and 6-8” in diameter.
    • Add scallion slices, 1 teaspoon sesame oil, 1 teaspoon chinese five spice, 1 teaspoon desired animal fat, 1 pinch msg to rolled-out dough. Spread ingredients evenly across the dough.

    Final shaping and dough roll out, prep tray

    • Roll dough with ingredients back into a ball.
    • Re-flatten dough ball into a pancake shape about ⅓” thick and 6-8” in diameter.
    • Add flour as necessary to keep dough from sticking excessively to rolling pin.
    • Spread 1 tablespoon cooking oil evenly across Zones 1, 2, and 3 of Brava Metal Tray.
    • Transfer flatten dough to Brava metal tray.

    Cook pancake(s)

    • Slide Brava metal tray into bottom shelf.
    • Select “Scallion Pancakes” on Brava UI and follow instructions.
    • Note: you will flip pancake after 6 minutes.
    • For subsequent cooks of the remaining dough, the cook will automatically adjust the total cook time to account for residual heat at the start of the recipe.

    Serve with desired sauce

    • Recommended sauces: gochujang, vinegar + soy sauce mixtures, spicy mustard, peanut sauce, fly-by-jing or your favorite asian dipping sauce.
