About this Recipe
Chef Andrew’s riff on the classic Brava Crepe recipe incorporates Parmesan for a simple and wildly flavorful savory twist.
Ingredients
- For the batter:
- 1.25 cups milk
- 1.0 cups flour
- 2.0 count eggs
- 2.0 tablespoons Parmigiano Reggiano cheese, finely grated
- 1.0 tablespoons oil or melted butter
- Pinch of kosher salt
- For serving:
- Savory fillings or toppings: other cheeses, roasted veggies, bacon, ham (optional)
- butter or cooking spray

Blend batter
- In a blender, add milk, flour, eggs, oil or butter, and pinch of kosher salt. Blend until smooth.

Cook crepes
- Grease Brava Square Pan with cooking spray or butter.
- Select “Parmesan Crepes” on the touchscreen and follow instructions to pour 1/3 cup batter into well greased square pan.
- Slide square pan into top shelf, and press green button to begin cooking.

Finish & serve
- When Brava notifies you that the cook is complete, carefully remove square pan.
- Add parmesan cheese and other desired toppings to top of crepe. (optional: do this step after rolling the crepe up)
- Use a rubber spatula to gently release the crepe from the pan, then roll it up and transfer to plate to serve with any additional fixings or sauces.
