Brown Sugar Snickerdoodles

About this Recipe
Snickerdoodles are one of Chef Travis’ favorite cookies, and he says this recipe is the best he’s ever made. The addition of brown sugar adds subtle hints of molasses and softer, chewy texture. If you prefer traditional snickerdoodles, just replace the brown sugar with granulated sugar. Store the dough refrigerated for up to 1 week or frozen for up to 1 year.
Ingredients
- 1.3333333333333333 cups all-purpose flour
- 1.0 teaspoons cream of tartar
- 0.5 teaspoons baking soda
- 0.5 teaspoons
- 1.0 count stick (1/4 lb) unsalted butter, softened
- 0.25 cups light brown sugar, packed
- 0.5 cups granulated sugar
- 1.0 count egg
- 1.0 teaspoons vanilla extract
- For rolling:
- 2.0 tablespoons granulated sugar
- 2.0 teaspoons cinnamon

Prep cookie dough
- In medium bowl, stir together flour, cream of tartar, baking soda and kosher salt.
- In another large bowl, either with electric mixer or by hand, cream butter and sugars until light and fluffy, about 3 minutes.
- Add egg and vanilla to butter mixture and mix well.
- Gently stir flour mixture into wet ingredients and mix for 30 seconds to thoroughly blend dough.

Chill cookie dough
- Cover dough and refrigerate for at least 30 minutes before forming balls.

Shape cookies
- In small bowl, stir together 2 tablespoons sugar and 2 teaspoons cinnamon.
- Line Brava Metal Tray with parchment paper.
- Scoop about 11/2 tablespoons dough and, using your hands, roll into ball. Toss dough ball in cinnamon sugar and transfer to metal tray. Repeat with remaining dough balls. You should have 2 dough balls in each zone.
- Set remaining dough, covered, back into refrigerator until ready to shape and bake.

Bake cookies
- Select “Brown Sugar Snickerdoodles” on the Brava touchscreen and press green button to begin rapid preheating, being sure to keep Brava completely empty during this step.
- When Brava is done preheating, slide metal tray into top shelf and press green button to begin baking.

Bake cookies
- When your cookies are done baking, cool on metal tray for 5 minutes, then transfer to wire rack to cool completely.
- Repeat above steps with remaining dough. If you prefer to save the dough for later use, shape into balls, and transfer to tightly sealed plastic bag. Store in refrigerator for up to 1 week, or in freezer for up to 1 year.
