Enjoy summer zucchini in this classic baked treat. Our take has a lovely balance of moisture, subtle sweetness and spice, and a bit of crunch on the top of the loaf, thanks to coarse turbinado sugar.
Ingredients
- Wet ingredients:
- 2.0 cups packed grated zucchini (about 10oz of zucchini, or about 1½ medium-sized zucchini)
- 0.5 cups brown sugar, packed
- 0.5 cups granulated sugar
- 0.5 cups Greek yogurt
- 3.0 tablespoons melted butter, cooled
- 2.0 tablespoons neutral oil, such as avocado oil or canola oil
- 2.0 count eggs
- 1.5 teaspoons vanilla extract
- Dry ingredients:
- 2.0 cups all-purpose flour
- 1.5 teaspoons cinnamon
- 1 teaspoon kosher salt
- 0.75 teaspoons baking soda
- 0.5 teaspoons baking powder
- 2.0 tablespoons coarse sugar, such as turbinado (optional)
- butter or cooking spray

Instructions

Prep zucchini bread batter
- In mixing bowl, add grated zucchini, brown sugar, granulated sugar, greek yogurt, melted butter, neutral oil, eggs, and vanilla extract.
- Gently fold mixture to evenly combine ingredients.
- In separate mixing bowl, whisk together flour, cinnamon, salt, baking soda, and baking powder.
- Gently fold dry mixture into wet mixture to combine.

Pour batter into pan and preheat Brava
- Pour mixture into greased Brava Loaf Pan.
- Sprinkle turbinado sugar on top of loaf, if using.
- Select “Zucchini Bread” on your touchscreen and press green button to begin preheating, being sure to keep Brava cooking chamber completely empty during this step.

Bake zucchini bread
- When Brava is done preheating, slide loaf pan into top shelf.
- Press green button to begin baking.

Cool bread and serve
- When zucchini bread is done baking, carefully remove loaf pan from Brava, transfer zucchini bread to cooling rack and let cool for at least ten minutes.
