Roasted and slightly burst cherry tomatoes come together with shrimp, herbs, lemon, and feta in a meal that can stand alone or be spooned over crusty bread. To make it, toss shrimp and cherry tomatoes in olive oil, garlic, and oregano before cooking in Brava. Once cooked, bring it all together with fresh lemon juice, parsley, and crumbled feta cheese. Enjoy over rice, pasta, on a salad, or as mentioned, toasted crusty bread.

Ingredients

  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh oregano, chopped
  • 1 small clove garlic, grated on microplane or finely chopped
  • 1 lb peeled and deveined shrimp (25–30 medium/large shrimp)
  • 4 cups cherry or grape tomatoes (about 1 lb), halved
  • 1 lemon, sliced into wedges for serving
  • Few pinches fresh flat leaf parsley, chopped
  • Crumbled feta cheese for serving
  • Crusty bread for serving
  • Crushed red pepper flakes (optional)

    Prep shrimp & tomatoes

    • In small bowl, whisk together olive oil, oregano, garlic, and few pinches kosher salt.
    • Toss half of olive oil mixture onto shrimp in medium bowl, and other half of olive oil mixture on tomatoes in medium bowl. Toss each to coat in mixture.

    Cook shrimp & tomatoes

    • Arrange shrimp evenly in single layer across Zones 1, 2, and 3 of Brava Glass Tray.
    • Arrange tomatoes evenly in single layer across Zones 1, 2, and 3 of Brava Metal Tray.
    • Select “Shrimp and Cherry Tomatoes with Herbs, Lemon, & Feta” on touchscreen and follow instructions to slide glass tray into top shelf and metal tray into bottom shelf.
    • Press green button to begin cooking.

    Finish & serve

    • Once food is cooked, transfer majority of tomatoes to serving plate. Top with shrimp. Scatter remaining tomatoes on shrimp.
    • Squeeze few wedges of lemon on top, and garnish with fresh parsley, and as much crumbled feta as you’d like. Top with freshly cracked black pepper, and crushed red pepper flakes, if desired. Serve immediately with crusty bread.
