Ingredients

  • 2½ lbs boneless beef chuck, cut into large chunks
  • 1 tablespoon vegetable oil
  • ½ yellow onion, cut into large chunks
  • 3 garlic cloves
  • ¼ cup apple cider vinegar
  • ¼ cup chicken stock or water
  • 3 tablespoons lime juice
  • 2 chipotle in adobo peppers
  • 1 tablespoon paprika
  • 1¼ teaspoon kosher salt plus extra for seasoning meat
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • ½ teaspoon cracked black pepper plus extra for seasoning meat
  • ¼ teaspoon ground cloves
  • 2 bay leaves
  • Chopped fresh cilantro and lime wedges for serving

    Prep & sear chuck

    • Dry beef with paper towels. Season both sides with a couple pinches of salt and pepper.
    • Evenly spread vegetable oil across bottom of Brava Chef's Pan.
    • Add seasoned beef to Chef's Pan.
    • Select “Slow Cooked Barbacoa” on your touchscreen and follow instructions to slide Chef's Pan, uncovered, into top shelf. Press green button to begin cook.
    • Note: You will remove Chef’s Pan after 12 minutes.

    Blend Sauce

    • While beef is searing, make sauce.
    • In a blender, add onion, garlic, apple cider vinegar, chicken stock (or water), 2 tablespoons lime juice, chipotles, 1 1/4 teaspoons kosher salt, paprika, cumin, oregano, 1/2 teaspoon black pepper and cloves. Blend until smooth and set aside.

    Add sauce & slow cook

    • When Brava notifies you, carefully remove Chef's Pan. Pour blended sauce over beef. Add bay leaves. Stir to combine.
    • Slide Chef's Pan, covered, into top shelf. Press green button to begin slow cooking for 8 hours.

    Finish & serve

    • When Brava notifies you, carefully remove Chef's Pan.
    • Using two forks, shred beef.
    • Top with chopped cilantro and few squeezes fresh lime juice, toss to combine. Serve while warm.
