About this Recipe

Mulled wine is a seasonal favorite and specialty of Christmas Markets across Europe. Whether it’s called glüwein, gløgg, vin chaud, bisschopswijn, svařák, grzaniec, or by any other name, red wine warms up with whole spices, citrus, sweetener, and often an extra spike of liquor. Our version uses cinnamon, cloves, star anise, and cardamom, though cinnamon and cloves are the most essential. No matter your favorite combination of spices and liqueur, this mulled wine is best enjoyed with warm company. Cheers!

Ingredients

  • 2.0 count cinnamon sticks
  • 8.0 count whole cloves
  • 2.0 count star anise
  • 4.0 count cardamom pods, cracked
  • 1.0 count large orange
  • 2.0 count 750 ml bottles full-bodied red wine, like zinfandel, malbec, cabernet sauvignon, or merlot
  • 1.0 cups Brandy
  • 0.5 cups brown sugar
  • Cinnamon sticks and sliced orange wheels, for garnish

Instructions

  1. 1

    Toast spices

    • Select “Slow Cooked Mulled Wine” on your Brava touchscreen.
    • Arrange cinnamon sticks, cloves, anise, and cardamom pods in Zone 2 of Brava metal tray.
    • Slide metal tray into top shelf.
    • Note: You will remove metal tray after 2 minutes.
    • When Brava notifies you that the cook is done, carefully remove metal tray and set aside to cool.

    Prepare mulling spice sachet

    • As the spices cool, using a vegetable peeler, cut a strip of orange peel, about an inch wide and a few inches long. If possible, avoid the white pith.
    • Place orange peel and toasted spices on a square of cheesecloth and tie with kitchen twine.

    Mull wine

    • Combine the wine, brandy, and brown sugar in the Chef’s Pan.
    • Juice the orange. Add no more than ½ cup of orange juice to Chef’s Pan and stir to incorporate.
    • Add the spice sachet and cover the Chef’s Pan.
    • Slide Chef’s Pan into top shelf, being careful not to spill any liquid, and press green button to slow cook for two hours.

    Serve and enjoy

    • Carefully remove Chef’s Pan, and ladle mulled wine into mugs or heat-proof glasses.
    • Garnish with orange wheel and cinnamon stick, or as desired.
