About this Custom Cook

2 eggs
1 c milk
1/4 c Greek yogurt
3 tbsp oil
1/2- 3/4 tsp vanilla extract
1 very ripe banana
3 tbsp sugar
1 c all purpose flour
pinch of salt

1. Blend all ingredients for batter in a blender until well mixed. Let sit 30-60 minutes at room temp.

2. spray square pan with oil

3. Pour 1/3 c batter into pan and swirl pan to evenly coat bottom

4. Put pan in top shelf of oven, follow prompts, press green button to begin cooking.

5. When cook time is done, remove from oven and use spatula to release crepe from pan.

6. Go to recents, select this recipe repeat steps 3-5, continue these steps till all batter is used. (note the oiling of the pan isn't needed in the rest of the cooks).

6. Top with nutella and more banana, or jam, fruit or whatever sweet toppings you like. Roll up and serve. These taste excellent rolled up and eaten plain as well.

This recipe makes around 7-9 crepes.

This recipe is very forgiving. I have let the batter rest for 30 minutes to an hour, not let the batter rest, added another half banana, added a bit more milk. The consistency changes a little bit but not enough to affect the recipe.
This is my husbands favorite crepe recipe to date.
