About this Custom Cook

Crispy, spicy with a vinegary bite, these chicken wings are guaranteed to be a hit at your next game day party! Chili Crunch (aka chili crisp) is all the rage right now, and Momofuku's version is my favorite. I adapted the sauce recipe from Momofuku's Ghost Pepper Chili Crunch Hot Wings recipe. For this custom cook I use Brava's chicken wings recipe and increase the personalization slider by 10% to make them extra crispy. This recipe makes a full tray, but you can adjust it down for 1 or 2 zones if you like - 5-6 party wings per zone works nicely.

INGREDIENTS
2 - 2.5 lbs chicken wings (party wings)
2 oz (1/2 stick) melted butter
2 tablespoons chili crunch
1 tablespoon rice wine vinegar
Sliced scallions (optional)

1. Pat wings dry and season with kosher salt and black pepper
2. Place wings in Zones 1, 2 and 3 of Brava metal tray
3. Slide metal tray into bottom shelf and press green button to begin cooking.
4. While the wings are cooking combine melted butter, chili crunch and rice wine vinegar in a large mixing bowl.
5. When the wings are done, transfer them to the mixing bowl and toss to coat with sauce.
6. Transfer wings to a plate, garnish with sliced scallions and serve.
