Chinese Steamed Eggs With Ground Pork

3 eggs
water (equal parts to eggs)
2-3 oz ground pork
some diced silken tofu (optional)
1 tbsp green onions
salt and white pepper to taste


A pinch of salt and white pepper
1/2 tsp of Chinese cooking wine
1/2 tsp sugar
1 tsp sesame oil
1 tsp soy sauce


1/2 tbsp heated oil
1/2 tbsp soy sauce


Marinate the pork and mix it well.
Spread it out on the bottom of the dish container in a thin layer.
If you are adding tofu, spread it on top of the pork.

Beat the eggs and add in the water and beat together.
Pour over the pork through a sieve to eliminate bubbles.
Sprinkle some green onions on top

Use a wire rack that can fit inside the Square Pan or whatever that can raise the dish above the water line. Put the dish on the rack. Pour hot water into the Square Pan up to rack top. Place a piece of foil on top of the dish.

Carefully place the Square Pan in the Brava. Press the Green Button. The cook is on REHEAT for 17 1/2 minutes. If it is not hardened to your liking you can REHEAT at 30 secs interval.

While the eggs are cooking make the sauce.
Mix together the heated oil and soy sauce.

When the cook is done, carefully remove the dish and spoon the sauce on top of the egg custard. Swirl the dish to coat it evenly.
