8 egg yolks

1 can condensed milk 14 ounces

1/2 cup evaporated milk

1/2 teaspoon grated lemon zest

1/2 teaspoon vanilla

1/2 cup of sugar for caramelizing

Melt the 1/2 cup sugar in an 8 inch round baking pan over low heat allow to caramelize sugar evenly on the bottom and sides of the pan.
In a bowl stir egg yolks until well beaten but not frothy. Pour evaporated & condensed milk into the egg yolks while stirring. Add lime or lemon zest and vanilla. Mix well.
Pour the mixture into the pan seal with aluminum foil so no water will get in.
Place the pan in a shallow steamer bath. Make sure that the pan is above the waterline. you want to steam it not boil it.
Bake at 400° for 45 to 60 minutes. Until the toothpick comes out clean.
Let it chill and served cold.
