Caramelized onions are a chef's secret weapon, adding deep, rich flavors to almost any recipe. If there's a better smell than onions caramelizing, I don't know what it is. You can't rush caramelized onions. It takes time and patience to slowly brown the natural sugar in the onions. Try to speed things up and the sugar will burn. Traditionally onions are cooked in a pan over medium low heat for a loooong time and require frequent stirring. Brava allows you to walk away from the onions for about 30 minutes each time before stirring, freeing you up to do other things! Note that the times get a little shorter between stirs in the latter half of the recipe.

This recipe makes about 1.5 - 2 cups caramelized onions. These would be great with a tablespoon or two of red wine vinegar and a few pinches of sugar if you like for more sweet and sour flavor.

1/4 lb (1 stick) butter, melted
12 cups sliced onions (1/4" thick slices, from about 3-5 onions)
1 teaspoon kosher salt
1/4 cup water

1. In Brava Chef's Pan, stir together butter, onions and salt. Pour water on top of onions and cover with lid. Slide pan into top shelf and press green button to begin cooking. You need to come back in about 30 minutes to stir.

2. When Brava notifies you, carefully remove the pan and stir onions. Slide pan, uncovered, into top shelf and press green button to continue cooking. Note you will not use the lid anymore in this recipe. You need to come back in about 35 minutes to stir.

3. When Brava notifies you, carefully remove the pan and stir onions. Slide into top shelf and press green button to continue cooking. You need to come back in about 35 minutes to stir.

4. When Brava notifies you, carefully remove the pan and stir onions. Slide into top shelf and press green button to continue cooking. You need to come back in about 35 minutes to stir.

5. When Brava notifies you, carefully remove the pan and stir onions. Slide into top shelf and press green button to continue cooking. You need to come back in about 15 minutes to stir.

6. When Brava notifies you, carefully remove the pan and stir onions. Slide into top shelf and press green button to continue cooking. You need to come back in about 20 minutes to stir.

7. When Brava notifies you, carefully remove the pan and stir onions. Slide into top shelf and press green button to continue cooking. You need to come back in about 20 minutes to stir.

8. When your food is done, transfer onions to storage containers and keep, refrigerated, for up to 1 week.
