About this Custom Cook

Pronounced mihr-PWAH, it is a mix of finely chopped onion, carrot and celery in a 2:1:1 to 1:1:1 ratio. This can used raw or cooked as a base for soups, sauces, marinades, stuffing, garnish, dressings or salads.

For this recipe it's a sweet and savory side dish or garnish, serve it on rice, chicken, fish, steak, baked potato, etc.

2-4 servings

Ingredients:
1/4 to 1/3 of a medium onion
1 carrot
1 celery stalk
2 TBSP Butter (or favored flavorful oil)
Pepper

1. Chunk veggies and chop in food processor or however to 1/8" to 1/4" or so.
2. Spread butter across bottom of loaf pan, add a touch of fresh ground pepper.
3. Spread mirepoix evenly across bottom of pan. Insert into top shelf with the handle slightly protruding the oven and let the closing of the door gently push the loaf pan directly in line with zone 1. Start the cook.
4. When prompted give the mix a stir. And finish.
5. Serve on top of fish or rice, etc. If I need to set it aside while something else is prepared, it can be quickly reheated with a restart and possibly if the top shelf is open and it won't interfere with the bottom shelf cook, can be slid to the front or back and warmed quickly.
