2 cup rice, 1-2 cup diced pineapple, 1/2 cup diced carrots, 1/2 cup peas, 3 tbsp olive oil, 3/2 cup water, 1cup chicken stock,2 tbsp coconut oil
1. mix rice, oil, ham, carrots and peas, add water, coconut milk, chicken stock, salt, sugar.
2. preheat to 400F
3. Bake for 35 min
4. Rest with lid on for 10 min
4. remove lid, add pineapple, green onion, put back in oven without kid, bake at 475F for 15 min
5. Sear for 1 min
