About this Custom Cook

Bolognese originated in the Italian city of Bologna. It's much richer, sweeter and more complex than your typical Italian-American meat sauce. Bolognese has been my favorite pasta sauce since I was a kid, and now you can make it, too! It takes some time, but that allows the flavors to develop and the meat to soften. This is best made one day in advance so the flavors have time to meld overnight. This keeps refrigerated for 4 days or frozen for up to a year.

It helps to put the bacon in the freezer for 15 minutes to make it easier to dice. You can use whole peeled canned tomatoes instead of puree, but make sure to blend or finely chop them before using. The parmigiano rind adds umami flavor you won't find anywhere else, but the sauce is also great without it.

4 slices bacon, diced (1/4-inch pieces)
1 cup diced onion (1/4-inch pieces)
6 cloves garlic, minced
3 tablespoons butter
1 lb ground beef, bison or pork
1 cup milk
1 cup dry white wine
1 small piece Parmigiano-Reggiano rind (optional)
1 (28 oz) can tomato puree
1 1/2 cups water

Note you will add ingredients in multiple stages during the first hour. You only use the lid in the last step. The last 3 hours are hands-free.

1. Combine bacon, onion, garlic and butter in Brava Chef's Pan; stir well. Slide Slide Chef's Pan, uncovered, into top shelf and press green button to continue.
2. When Brava prompts you, add beef; stir well. Spread beef into an even layer in bottom of Chef's Pan. Slide Slide Chef's Pan, uncovered, into top shelf and press green button to continue.
3. When Brava prompts you, flip beef over. Slide Slide Chef's Pan, uncovered, into top shelf and press green button to continue.
4. When Brava prompts you, add milk. Slide Slide Chef's Pan, uncovered, into top shelf and press green button to continue.
5. When Brava prompts you, add wine and parmigiano rind, if using. Slide Chef's Pan, uncovered, into top shelf and press green button to continue.
6. When Brava prompts you, add tomatoes and water; stir well. Slide Chef's Pan, COVERED, into top shelf and press green button to finish cooking.
