place pinwheels in zone 2 on metal tray bottom shelf and insert temp sensor
cook will pause at 3 minutes to flip and sear the other side
If not seared enough continue cook and check in a minute or two. When ready flip start cook over from the beginning and fast forward to the beginning of second sear
