I got a few extra thin steaks from the grocery and couldn’t find a cook. So I made this one which works well and is faster than doing it in a cast iron pan and easier to clean up.

Have everything else for your meal ready first and ready to plate. If you don’t have a way to keep things warm which I don’t since Brava is my only oven. I heat the chef pan at high temp and set it aside to keep the other food warm in.

Fast sear of thin steak requires you to be quick about this as you flip and finally remove to get a medium done. In under 2 minutes.

1. Preheat empty metal tray on bottom shelf. Have steak ready to drop into zone 2 on the first ding.

2. Pat dry and lightly oil both sides of a thin steak. Light spices or pepper can be added, but may burn.

3. On the first ding after preheat, slide the tray out and drop the steak(s) in zone 2. Slide it back in and hit the button. You should hear sizzling the moment the steak hits the tray.

4. On the first ding slide the tray out and flip it in zone 2, slide the tray back in and hit the button. I find tongs are more effective than a spatula for a quick grab and flip as the steak slides on the nonstick surface when approached with a spatula.

5. On the first ding remove, plate and serve.

I find this gives me a medium to medium well done thin steak in less than two minutes.
