Ingredients:

2 C. flour
2 tsp. ground cinnamon
1 tsp. baking soda
1/4 tsp. baking powder
1/2 tsp. kosher salt
1 1/2 C. sugar
3/4 C. vegetable oil
3 large eggs
1 tsp. vanilla extract
1 1/2 C. grated zucchini
1 1/2 C. grated peeled sweet potato
1 C. toasted walnuts, optional

Directions:

Preheat Brava by pressing the green button for this recipe.

Spray non-stick spray in loaf pan. Whisk first 5 ingredients in a medium bowl. Whisk sugar, oil, eggs and vanilla in a large bowl. Mix in zucchini and sweet potato in wet ingredients. Then add dry ingredients and walnuts and mix well.

Pour batter in prepared loaf pan and place in Brava. Press green button. After baking test for doneness as it may need a few more minutes to bake completely. Allow to rest in pan for 15 minutes before removing.
